As if I don't already have enough going on in my life, Rob and I signed up to work with Jared Vaughn, a holistic health coach, for the next three months. He wants us to experiment with new foods, eliminate processed foods, and have a more plant based diet. This week we're vegans!
Foods I've discovered since becoming a vegan:
Coconut: Anything from a coconut is amazing: the milk, the oil, the sugar. I loved the coconut milk yogurt and creme brulee I tried this week.
Soba Noodle Stir Fry: I ate this the night before my 20 mile run. I felt great the next day. I'll definitely be trying that again.
Kale chips: Great stuff! Super easy to make.
I didn't realize how many foods vegans can actually eat. It's not that difficult after all. While I'm looking forward to eating meat again next week, I'm glad to have the experience. Losing five pounds in two weeks doesn't hurt either.
The craziest thing is that we've discovered around five vegan/vegetarian restaurants within walking distance from our apartment. They've always been there, but we just ignored them. Of course I accidentally order the most unhealthy item on the menu (tempera/fried veggies ha), but I'm happy to know they exist.
Have you ever experimented with veganism? It's interesting. I have to be honest, sometimes I'll try a food and think I just can't deal with this. Perhaps it takes awhile. Like the Green Goddess Smoothie? Oh my. Not happening for me. Not yet anyway!

ReplyDeleteI practically eat vegetarian without realizing it....but as soon as I make a conscious effort to not eat meat, suddenly I crave burgers and fried chicken. It's actually healthier for me not to try to eat healthy!

ReplyDeletelast year i suggested going vegan for a week which turned into a month which then turned into 7 months before my husband broke down in trader joes begging for real cheese! and on that i couldn't blame him. the 2 things i missed the most were eggs and cheese and the eggs mostly for baking purpouses. but cheese, there is no true substitute ;) congrats for giving it a go! and wow i admire your running 20 miles.

ReplyDeleteMy husband and I are vegetarian, but we could never give up cheese and eggs. It's awesome that you guys are trying to eat more holistically!
I've tried to be a vegan but found it too extreme for me. I am already a vegetarian but I love my dairy too much. Maybe when I found a better paying job I can buy the more expensive dairy free stuff that taste like dairy.
ReplyDeleteBeen vegetarian for about 15 years (I'm 25 now), I guess its easy cause there are plenty of vegetarian and even more vegan bistros, restaurants, grills and stuff in berlin and germany in general. Seitan is always a good choice, its soy, and not as boring as tofu. also you should try to make vegan cupcakes, carrot cakes and brownies...some of the most delicious baked good i had were vegan.
ReplyDeleteI've been a vegetarian my whole life. So grateful that my parents raised me vegetarian, now it takes no effort to live the lifestyle. I've tried to go vegan a few times, but I appreciate good cheese too much. I treat cheese like a dessert or a garnish. I may sprinkle a bit of feta on my salad or eat a couple slices of aged manchego with an apple, but thats pretty much all the dairy I consume. I agree with the comment on how its harder to not eat things when you're trying not to eat them!

I was vegan for about 7 months. I just didn't feel right. Now I am eat a more paleo diet with traditional foods. We like raw milk and cheeses and ferment veggies and I make my own yogurt. We feel incredible! Plus it's so hard being vegan and a mom to 3 babies.. so much prep. Also, soy is awful for you and I found that a ton of vegan stuff has soy in it. Good for you for using coconut stuff! So healthy!!

It's a tad tough to do away with the dairy/eggs if you like to eat out a lot (though in NYC, like you said, there are SO many amazing vegan restaurants- love Candle Cafe on UWS and Blossom down in W. Village) but I've been vegan (occasionally vegetarian when eating out or on business trips) for about 8 months now. It makes me feel cleaner and lose and it enables you to maintain weight loss much easier than with a meat diet (my husband lost 7 pounds and I lost 2 pounds while staying really fit and athletic--neither of us were trying to lose weight but it just happened naturally with the change to veganism). For me, once I learned more about the food industry practices, I've become motivated because the meals feel more ethical and "right". Highly recommend "Eating Animals" (for more understanding of the good industry practice/ethics/environmentalism) and "The China Study" (for more understanding of the health aspect). The former motivated me to become vegan and the latter motivated my husband. Good luck and hope you guys are enjoying the education and life change!
ReplyDeleteI was vegan for about a year and only recently started eating a little bit of cheese and egg whites occasionally (still vegetarian). It's easy for me to eat vegetarian because I'm not a huge meat eater. It took a few months for me to get used to not drinking milk and eating ice cream but now I rarely even think about it. I agree with Anitra! Soy concerns me so I use nut milks and I stay away from meat and cheese substitudes. There are so many other foods to eat!
ReplyDeleteAfter Forks Over Knives we tried it for about a week. But my husband is super thin and even filling up our plates with grains and beans and good fats, he just couldn't stop losing. And I was finding that there weren't many meals he could eat on the go as he needs to for his work in construction. I didn't like that there were many processed 'replacers' because in my mind, processed is processed, vegan or not. So, we've slid back to our omnivore habits but I buy as responsibly as I can.
ReplyDeletei tried being a vegan for a while, but only because i had a cool friend and we would go to this buddhist-vegan restaurant that served fake (soy) meat. i didn't last long. it was around this time that a lot of crazy shit is vegan - oreos? 7-11 doughnuts? - and never means it's healthy. (obvs.) but it also introduced me to the 'vegan cupcakes' cookbook, which is absolutely bombproof. impeccably tested and yummmmmmmmm.....

I'm 20 and have been vegetarian for seven years and vegan for the past three. I live in Sydney, Australia and unfortunately our vegan dining options aren't great here. Thankfully I am spending December in NYC - it's my first visit and I've never been more excited in my entire young life!. My boyfriend* and I are keen to try out every vegan restaurant around! Any suggestions?!
