Last Weeks Dinner Situation

HelloFresh delivered three meals to me last week.  So I did the rational thing and practiced my food style techniques with all the gorgeous food they sent me. Isn't it wonderful? The food, not the styling. I tried to mimic the pictures on their recipe cards. They nailed it. Check out this one and this one food styling lovers. 
Notice how they included the tools I need to have on hand before I start cooking? Loved that. I need all the help I can get in the kitchen. Trader Joes frozen dinners have been on heavy rotation at my house for the past five years. A few weeks ago, my health coach Jared Vaughn encouraged me to start cooking again. The same week I started at Elizabeth Street. The timing couldn't have been worse.

I felt like a person in an infomercials who dramatically struggle to get simple tasks done. You know the shot: It's always in black and white with a person with frazzled hair. That was me at the grocery store looking for soba noodles and ginger. HelloFresh made last week so much easier by sending premeasured food for three meals. Only thing that slowed me down was my food styling attempts.  My kids must think I'm crazy. I could tell Owen was thinking, "What are you doing?! Cook the damn the food mom!"
And I so did.  Each recipe was simple, special and tasty.  I loved it so much, I bought the vegetarian meals this week. It's a little cheaper than their regular boxes and will force me to try new things. The box should arrive today! I can't wait.

  1. Love this! I saw this post on Elizabeth Street and have been intrigued ever since. I love the idea that they include the recipes. I used an organic delivery box service before and never knew how to use half the ingredients! This seems so much easier.

    A few random questions:
    -How long is your coupon code good for? I really want to try this, but will probably pull the trigger sometime next week.
    -Do they charge your card when it ships or before?

    And lastly, do you feel like there is enough variety? I stopped using the other delivery service because I was getting the same thing every week (potatoes) and wanted some variety and direction.

      *The coupon code is good until the end of January.
      *Charges are made the day of delivery
      *I think there is variety. Last week we had a coconut shrimp, lamb with cranberries, and the chicken paillard(shown). The starch for each meal was potatoes and two types of rice. I bought a rice cooker over the weekend because I suspect that will be one of their staples. This is my first week of the vegetarian meal plan and it looks like from the choices I was given, it has a variety. I'll see after a few weeks though.

    1. My kids loved the meat and the rice/potatoes in the meals. They scraped off the topping and just picked at the veggies. Typical! I loved it all though.
      Also: yeah--They basically serve the entire east coast. hopefully they will come out to California someday!

  6. These are three quick meals that take as much or less time than TJ frozen meals but if you love TJ meals, then ignore this. I'm not judging, just sharing part of a meal plan I've learned.

    Sunday evening prep.
    Cut up one of each - red & green pepper & onion. Lightly cover the bottom of a saute pan with olive oil. Over a medium - low heat, saute onions for about 5 minutes, then add red & green peppers. Saute till tender crisp. Cool & put in a container for later in the week.

    Monday morning (10 mins prep and dinner will be waiting for you)
    Crockpot Chicken

    Ingredients:
    1 bag of baby carrots
    6 potatoes (wash, leave skin on & cut in half)
    1 onion (remove skins, cut in half)
    2 cloves of garlic (remove skins, smash with back of knife)

    3 lbs chicken, cut up with bones & skin

    2 tsp salt
    2 tsp black pepper
    3 tsp dried basil

    1 c water

    Directions:
    Place all the veggies in the bottom of the slow cooker. Add the chicken on top, then seasonings and water.
    Cover and cook on low for 8-10 hours.

    Use the leftovers for two meals. Shred and separate the chicken into two containers, adding crock pot broth to one of them. One for tacos & the other with leftover broth & carrots to make Chicken Noodle Soup.

    Chicken Noodle Soup

    Ingredients:
    Egg Noodles
    Chicken Broth
    Leftovers from Crockpot Chicken

    Hard Rolls

    Directions:
    Bring a pot of water to boil with a couple pinches of salt. Add egg noodles or whatever noodles you have on hand according to directions minus a couple minutes.
    Drain most of the water depending on how much broth you have left from Crockpot Chicken or add boxed chicken broth. Add leftovers from Crockpot Chicken, heat until warm and serve with hard rolls.

    Chicken Tacos

    Ingredients:
    Taco Seasoning
    Black Beans
    Lettuce
    Tomatoes or Salsa
    Shredded Cheese
    Soft Shells
    Leftover Chicken (Saved for Tacos)

    Directions:
    Mix leftover chicken with taco seasoning (follow directions on package). Heat black beans & soft shells. Cut up lettuce & tomatoes. Serve.

    I realize your family is larger than mine, but I think you'll see how little time three meals can be made and they're all non-boxed, non-frozen, controlled seasoning.
