Healthy Salad Idea: Green Goddess Salad

While discussing meal ideas, my friend Kendra Smoot suggested a Green Goddess salad. I asked her what's in it and she said, "Anything green!" Sounded easy enough, so I headed to the grocery store and bought greens—and only greens. I had fun narrowing down my choices by color. After a while, I had to edit my basket down--out went the celery, green peppers, and sprouts. Maybe next time. I haven't tested it out on the kids, but they will probably hate it. Every time I give Oscar a salad, he strongly reminds me he's a meat eater. What's your favorite dressing? I tried this salad with Annie's Green Garlic dressing and thought it was awful. I know with the right dressing this salad could be stellar.

  1. I always thought that Green Goddess referred to the salad dressing - but if you didn't like Annie's green garlic, you will hate Annie's green goddess dressing, too. Blech on Annie's.   2. I mistook the avocado chunks for nobs of butter at first and thought... MMMmmmMMmMmmMmmm...
    Perhaps this should be a warm salad with nobs of melting butter instead of the dressing you tried..hehe

I used to do this a lot at uni- and I also made rainbow salads, so tried to get as many colours in as I possibly could- think tomatoes, carrots, yellow peppers, LOTS of greens, blueberries for sweetness, and roasted aubergine.... amazing. I'm getting so much more into salads again and I'm SO happy about it! x

    It's my absolute favourite dressing and it's so good with just about every veggie, but especially avocados. It's salty and creamy all at the same time. I like to make a big jar and keep it in the fridge all week.

  5. I make this dressing to order every time I have a salad. It's so easy, and delicious.
    - a bit of olive oil
    - a bit more of balsamic vinegar
    - a generous squeeze of fresh lemon juice
    - two fresh minced garlic cloves
    - a dash of honey
    - a bit of salt
    - cracked black pepper
    Whisk it all together until it thickens just a bit, then pour on the salad!

  6. Great post. I love all the natural ingredients. I have recently used greek yogurt, honey, and white balsamic vinegar. So good and a little creamy to help the dry ingredients.

  7. I need color in my salads, i love tomatoes, garbanzos, peppers, carrots, and purple cabbage along with the spinach, snap peas, and sometimes I even add a little thawed out corn. I like either balsamic dressings or blue cheese but can go way overboard with the second one, so I always put dressing in a little bowl and dip.

    if your kids like tuna, my mom used to have us make tuna face salads. you basically lay out your lettuce/spinach and top it all with a layer of tuna/tuna salad and have them decorate it or make the eyes, nose, mouth, ears, etc... with add on veggies

  9. Annie's Goddess dressing! Not just because the name is perfect. I always make my own dressing except for this one...it's the only one I buy. It's also amazing as a veggie dip for baby carrots, celery, etc.
